One other perplexing question - how do you set the styles on the wiki server? I don't want the ordinary powder blue schema. I'd also like to override the title on the main page that says "OS X Server". Anyone have any insight into how to accomplish this?

If you log in to the wiki (press the lock icon in the top-right) with a server admin account (e.g. ladmin) you'll get the pencil icon in the toolbar which allows you to edit that page.

I'll look again shortly, but I don't think the pencil allows me to edit the CSS or the title bar, at least on LS 10.7.4.

No it doesn't. If you want to do that you need to edit the precomipled startup scripit (see here) but this isn't supported, Apple doesn't guarantee that your changes won't be overwritten by an OS update.
